La Borie

Located in Haute-Loire, in the commune of Saint-Austremoine, the La Borie farm stretches over more than seventy hectares. Today, with the ambition of becoming a new player in responsible food production, Marc and Tanguy have brought their shared passion together with the sole purpose of showing that eating well while respecting the planet, people, and all living species is still possible.

Far from any pollution and free of agricultural exploitation for more than 20 years, the environment — and especially the soil — offers ideal conditions to experiment with and develop our non‑profit agricultural model.

We rely on a diverse range of permaculture crops and livestock to offer a wide variety of foods and flavors. We work hand‑in‑hand with local ecosystems, where living organisms interact naturally to help us achieve our goals of carbon neutrality and zero waste. We use no chemical fertilizers or pesticides, ensuring the most natural products possible.

Together with the restaurant, we create a truly closed‑loop system, even more virtuous than traditional short supply chains. All waste, trimmings, and by‑products are reused to produce our composts, natural fertilizers, and animal feed.

With our restaurant in Paris’s 15th arrondissement, our aim is to offer you an authentic experience, rooted in the seasons and infused with the very essence of our countryside farm.

We believe in a holistic approach to cuisine, where each dish is the result of a carefully considered process, from seed to table. We lovingly grow our own products — from fresh vegetables and aromatic herbs to poultry, sheep, snails, and even bees.

In this spirit, we offer a single seasonal menu, crafted with what we have harvested during the week. We will gladly adapt it to your preferences.
